  • ½ tsp salt
  • ½ cup brown sugar (for the streusel topping)
  • ¼ cup cold unsalted butter (cut into small pieces)
  • ½ cup rolled oats
  • ¼ cup all-purpose flour (for the streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, and vegetable oil until smooth.
  4. Gradually combine the dry ingredients with the wet mixture without overmixing.
  5. For the streusel topping, mix brown sugar, oats, flour, and cold butter until crumbly.
  6. Pour half of the batter into the prepared pan; sprinkle with half of the streusel topping. Add remaining batter and finish with the rest of the streusel.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
