  • 1 cup jasmine rice
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup water
  • 1 lb beef flank steak, sliced thinly against the grain
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey
  • 2 tbsp sesame oil (for cooking)
  • Green onions (for garnish)

Instructions

  1. Rinse jasmine rice under cold water until clear. In a medium saucepan, combine rinsed rice, coconut milk, and water. Bring to a gentle boil over medium heat.
  2. Reduce heat to low, cover tightly, and simmer for 15-20 minutes until liquid is absorbed and rice is fluffy.
  3. Meanwhile, heat sesame oil in a large skillet over medium-high heat. Add sliced flank steak in batches; sear for about three minutes per side until browned but not fully cooked.
  4. Add minced garlic, ginger, and sliced bell peppers to the skillet. Stir-fry for around five minutes until veggies are tender-crisp.
  5. Mix soy sauce and honey in a small bowl; pour into the skillet and stir until everything is well-coated. Cook for another minute or two.
  6. Fluff coconut rice with a fork and serve topped with the beef stir fry mixture garnished with green onions.
