  • 1/2 cup breadcrumbs (plain or Italian-seasoned)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 4 cups low-sodium vegetable broth
  • 4 cloves garlic, minced
  • 2 cups fresh spinach, chopped
  • Salt and pepper to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Olive oil for browning

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan, minced garlic, salt, and pepper. Form into small meatballs (about 1 inch in diameter).
  2. Heat olive oil in a large pot over medium heat. Brown the meatballs on all sides for about 5-7 minutes. Remove and set aside.
  3. In the same pot, add vegetable broth and bring to a simmer while scraping up any browned bits.
  4. Stir in heavy cream, oregano, and basil; let simmer for about 5 minutes.
  5. Return meatballs to the pot and add chopped spinach. Cook until spinach wilts (about 2 minutes).
  6. Serve hot with extra Parmesan if desired.
