  • 1 lb lean ground turkey
  • 2 cups fresh spinach, chopped
  • 1/2 cup breadcrumbs (plain or Italian)
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup grated Parmesan cheese
  • 4 oz cream cheese, softened
  • 1/2 cup heavy cream
  • 1/2 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground turkey, spinach, breadcrumbs, egg, garlic powder, onion powder, and half of the Parmesan cheese. Mix gently until just combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on the prepared baking sheet with space between each.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. Meanwhile, in a saucepan over medium heat, whisk together the heavy cream and chicken broth until smooth. Stir in the remaining Parmesan and cream cheese until melted.
  6. Add the baked meatballs to the sauce and simmer for five minutes before serving.
