  • 4 large flour tortillas
  • 1 lb ribeye or sirloin steak, cut into thin strips
  • 1 lb fresh or thawed shrimp
  • 2 tbsp Creole seasoning
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sliced bell peppers (red, green, or yellow)
  • 1/2 cup sliced onions (yellow or red)
  • 1/2 cup sour cream (for serving)

Instructions

  1. Preheat a large skillet over medium-high heat and drizzle with olive oil.
  2. Sauté bell peppers and onions for about 5 minutes until softened.
  3. Add steak strips along with 1 tbsp of Creole seasoning; cook for 3-4 minutes until browned.
  4. Incorporate shrimp and remaining Creole seasoning; cook until shrimp turn pink (about 3 minutes).
  5. On one half of each tortilla, layer cheese followed by the steak-shrimp mixture, then fold.
  6. Grill each quesadilla in the skillet until golden brown on both sides (approximately 2 minutes each side).
  7. Serve hot with sour cream.
