  • 4 large flour tortillas
  • 1 cup cheddar cheese, shredded

  • Vegetable oil for frying

  3. Warm tortillas in the microwave for about 20 seconds to make them pliable.
  4. Spoon about two tablespoons of the beef mixture onto each tortilla and sprinkle with cheddar cheese. Fold sides in and roll tightly.
  5. Heat oil in a deep pan over medium-high heat (around 350°F). Fry chimichangas seam-side down until golden brown, about 3 minutes per side.
  6. Drain on paper towels and serve hot with salsa or guacamole.
