Crispy Nacho Egg Rolls are a mouthwatering fusion snack that combines the beloved flavors of nachos into a delightful bite-sized treat.   • 8 egg roll wrappers
  • 1 cup shredded sharp cheddar cheese
  • 1 cup cooked ground beef or turkey
  • 1/2 cup canned black beans, rinsed
  • 1/4 cup diced jalapeños (fresh or pickled)
  • Cooking spray
  • 1/2 cup sour cream
  • 1/2 cup salsa

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat, then stir in black beans and jalapeños. Season with salt and pepper.
  3. Place an egg roll wrapper on a clean surface and add two tablespoons of the filling in the center. Fold the bottom corner over the filling, then fold in the sides and roll tightly. Seal edges with water.
  4. Arrange egg rolls on the baking sheet and lightly spray them with cooking spray. Bake for about 20 minutes until golden brown.
  5. While baking, mix sour cream and salsa in a bowl for dipping sauce.
  6. Serve warm with dipping sauce on the side.
