  • 2 cups rolled oats
  • 1/2 cup honey or maple syrup
  • 1 cup chopped almonds or walnuts
  • 1/2 cup dried fruits (raisins or cranberries)
  • 1/2 cup toasted coconut flakes
  • 1 tsp cinnamon
  • Oil for frying (approximately 2 cups)

Instructions

  1. In a large bowl, mix rolled oats, chopped nuts, coconut flakes, dried fruits, honey (or maple syrup), and cinnamon until well combined.
  2. Heat about two inches of oil in a deep frying pan over medium heat to approximately 350°F (175°C).
  3. Using a slotted spoon, carefully drop small handfuls of the granola mixture into the hot oil. Fry in batches for about 3-4 minutes until golden brown and crunchy.
  4. Remove from oil and place on paper towels to drain excess oil. Allow to cool before storing in an airtight container.
  5. Serve as-is or use as a topping for yogurt or ice cream.
