  • 8 small corn or flour tortillas
  • 1 cup shredded red cabbage
  • ½ cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 cup plain Greek yogurt
  • 2 tbsp fresh dill, chopped (or 1 tbsp dried dill)
  • 1 tsp garlic powder
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place salmon on the baking sheet; season with salt and pepper. Bake for 12-15 minutes until flaky.
  3. In a bowl, mix Greek yogurt, dill, garlic powder, lime juice, and salt until well combined.
  4. Warm tortillas in a skillet over medium heat for about one minute on each side.
  5. Flake baked salmon into bite-sized pieces. Assemble tacos by adding red cabbage, cilantro, and salmon to each tortilla. Drizzle with tangy dill yogurt sauce.
  6. Serve immediately with extra lime juice if desired.
