  • 2 cups duck fat
  • 4 sprigs fresh thyme
  • 2 large Granny Smith apples, peeled and chopped
  • 1/3 cup brown sugar (adjust to taste)
  • 2 tablespoons freshly squeezed lemon juice

Instructions

  1. Season duck legs with kosher salt and let marinate in the fridge overnight.
  2. Preheat your oven to 225°F (107°C). Use a heavy-duty pot or Dutch oven on low heat.
  3. Melt enough duck fat to fully submerge the legs and add the marinated duck legs to the pot.
  4. Sprinkle fresh thyme over the duck, cover tightly with a lid or foil, and bake for about 4 hours until tender.
  5. While the duck cooks, prepare apple sauce by simmering chopped apples, brown sugar, and lemon juice in a saucepan until soft.
