  • 3 cups marinara sauce

  • 4 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice eggplants into 1/2-inch rounds and sprinkle with salt. Let sit for 30 minutes to draw out moisture.
  3. Rinse and pat dry the eggplant slices. Drizzle with olive oil and roast on a baking sheet for 20-25 minutes until golden.
  4. In a baking dish, layer marinara sauce, roasted eggplant, mozzarella, parmesan, and basil. Repeat layers until all ingredients are used.
  5. Cover with foil and bake for 30 minutes; then remove foil and bake an additional 10-15 minutes until bubbly and golden.
