  • 3/4 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tbsp espresso powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup chocolate chips (semi-sweet or dark)
  • 1 cup toffee bits

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, salt, and espresso powder; set aside.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy (about 3 minutes).
  4. Beat in eggs one at a time followed by the vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  6. Fold in the chocolate chips and toffee bits until evenly distributed.
  7. Drop heaping tablespoons of dough onto prepared baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes or until golden brown around the edges but soft in the center. Let cool slightly before serving.
