  • 1 cup butternut squash, diced
  • 4 strips bacon
  • 1 medium Granny Smith apple, chopped
  • 2 hard-boiled eggs, sliced
  • 1/2 cup blue cheese crumbles
  • 3 tablespoons honey mustard dressing

Instructions

  1. Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper on a lined baking sheet. Roast for 20-25 minutes until tender.
