Instructions

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast on a foil-lined baking sheet for about 45 minutes until tender.
  2. Once cool, peel and mash the sweet potatoes in a bowl until smooth.
  3. In another bowl, whisk together the egg and milk; then mix in the mashed sweet potatoes until combined.
  4. In a separate bowl, combine flour, baking powder, and cinnamon; mix well to avoid clumps.
  5. Gradually add the dry ingredients into the wet mixture while stirring gently to keep the batter fluffy.
  6. Heat a nonstick skillet over medium heat and lightly grease it. Pour in about half a cup of batter for each pancake and cook until bubbles form on top, about 2 minutes per side.
