  • 1 cup whole milk

  • Pinch of salt

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs. Gradually add ice water until dough forms. Wrap in plastic wrap and refrigerate for at least 30 minutes.
  3. Roll out the chilled dough on a floured surface to fit your pie pan. Trim excess dough and poke holes in the bottom.
  4. Place parchment paper over the crust and fill with weights; pre-bake for about 15 minutes until lightly golden.
  5. Whisk together eggs and sugar in another bowl, then add milk, vanilla extract, and nutmeg; mix until smooth. Pour into the pre-baked crust.
  6. Bake for an additional 25-30 minutes until the custard is set but slightly jiggly in the center.
