  • 2 large yellow onions, sliced
  • 4 slices Swiss cheese
  • 4 slices rye or sourdough bread
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Caramelize the onions: Heat a skillet over medium heat, add 1 tablespoon of butter, and cook the sliced onions for 15-20 minutes until golden brown.
  2. Shape the patties: While the onions cook, form ground beef into four 6-ounce patties. Season with salt and pepper.
  3. Cook the patties: In another skillet, melt the remaining tablespoon of butter over medium-high heat. Cook the patties for about 4-5 minutes per side until desired doneness. Place Swiss cheese on top during the last minute to melt.
  4. Assemble the sandwich: Butter one side of each slice of bread. Layer one slice butter-side down with caramelized onions and a patty topped with melted cheese; cover with another slice butter-side up.
  5. Grill: Cook in a skillet until both sides are golden brown, about 3-4 minutes each side.
