  • 2 pounds Russet potatoes, thinly sliced
  • 2 large sweet onions, thinly sliced
  • 4 tablespoons butter
  • 2 cups low-sodium beef broth
  • 2 cups Gruyère cheese, shredded
  • 1 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C) and grease a large baking dish.
  2. In a skillet over medium heat, melt butter and sauté onions until caramelized (15-20 minutes).
  3. Layer half the sliced potatoes in the baking dish. Pour half the beef broth over them, then top with half the onions and a handful of cheese.
  4. Repeat layers with remaining potatoes, broth, onions, and more cheese.
  5. Mix panko with melted butter; sprinkle on top. Cover with foil and bake for 45 minutes. Remove foil for the last 10 minutes for browning.
