  • 4 medium Yukon Gold potatoes, thinly sliced
  • 2 large sweet onions, sliced
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 2 cups Gruyère cheese, shredded
  • 1 tsp fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. In a skillet, melt butter over medium heat. Add sliced onions and salt; caramelize for about 20 minutes until golden brown.
  3. Slice potatoes thinly (about an eighth of an inch).
  4. In the baking dish, layer half of the potatoes, followed by half of the caramelized onions and half of the cheese. Repeat layers.
  5. In a bowl, whisk together heavy cream, thyme, salt, and pepper; pour over layered ingredients.
  6. Cover with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden.
