  • 4 lbs pork shoulder
  • 6 garlic cloves, minced
  • 1 large yellow onion, cut into wedges
  • 2 tsp caraway seeds
  • 1 cup low-sodium vegetable broth
  • ¼ cup Dijon mustard
  • 2 tbsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix together the Dijon mustard, minced garlic, smoked paprika, salt, pepper, and caraway seeds.
  3. Rub the marinade all over the pork shoulder.
  4. Place the pork in a roasting pan and scatter onion wedges around it.
  5. Pour vegetable broth into the bottom of the pan.
  6. Cover with foil and roast for about three hours or until the internal temperature reaches at least 190°F (88°C).
  7. Let rest for 15 minutes before slicing.
