  • 3 garlic cloves, minced
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 8 oz fresh or dried ramen noodles
  • 1 cup mixed vegetables (carrots, bell peppers, bok choy)
  • 1 tbsp sesame oil (plus additional for cooking)

Instructions

  1. Slice the chicken breasts into thin strips. Heat 1 tablespoon of sesame oil in a skillet over medium-high heat. Add the chicken, season with salt and pepper, and cook until browned and cooked through (5-7 minutes).
  2. In a small bowl, mix grated ginger, minced garlic, soy sauce, brown sugar, and another splash of sesame oil to create the glaze.
  3. Pour the glaze over the cooked chicken in the skillet and simmer for 2 minutes until well coated.
  4. Cook ramen noodles according to package instructions; drain and set aside.
  5. Sauté mixed vegetables in another pan with a bit of sesame oil for about 3 minutes until vibrant but crisp.
