  • 2 medium eggplants (sliced lengthwise into 1/4-inch strips)
  • 1 cup whole milk ricotta cheese
  • 1/2 cup fresh basil leaves (chopped)
  • 1 cup marinara sauce
  • 1/2 cup grated Parmesan cheese (divided)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Sprinkle salt on eggplant slices and let sit for 30 minutes to draw out moisture.
  2. Preheat grill or grill pan over medium-high heat. Rinse and dry eggplants, then brush with olive oil.
  3. Grill eggplant strips for 3-4 minutes per side until tender and grill marks appear.
  4. In a bowl, mix ricotta, chopped basil, half of the Parmesan, salt, and pepper.
  5. Place about 2 tablespoons of filling on one end of each eggplant strip and roll up gently.
  6. Preheat oven to 375°F (190°C). Spread marinara sauce in a baking dish; arrange roll-ups seam side down. Top with remaining marinara and Parmesan.
  7. Cover with foil and bake for 20 minutes; remove foil and bake an additional 10 minutes until bubbly.
