  • 2 (6 oz) fresh white fish fillets (cod or haddock)
  • 2 large Russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon freshly cracked black pepper
  • 1 lemon, cut into wedges
  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1 cup beer or sparkling water

Instructions

  1. Wash and peel the potatoes; cut them into thick chips (about half an inch wide). Soak in cold water for at least 30 minutes.
  2. In a bowl, mix flour, cornstarch, salt, and pepper. Gradually whisk in beer (or sparkling water) until smooth.
  3. Preheat your grill to medium-high heat.
  4. Toss soaked potato chips in olive oil and sprinkle with salt. Grill for about 15-20 minutes until golden and crispy.
  5. Dip each fish fillet in batter until fully coated. Grill for about 3-4 minutes per side until golden brown.
