  • 8 oz halloumi cheese, cut into 1-inch cubes
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 medium zucchini, sliced thickly
  • 1 cup cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tbsp fresh oregano or basil, chopped

  5. Grill skewers for 10-12 minutes, turning occasionally until charred.
