  • 4 bone-in, skin-on chicken thighs
  • 1 cup Burgundy or Pinot Noir red wine
  • 4 slices thick-cut bacon
  • 1 cup cremini or button mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 2 shallots, finely chopped
  • 4 sprigs fresh thyme
  • 1 cup low-sodium chicken broth
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper. In a Dutch oven, cook bacon over medium heat until crispy; remove and set aside.
  2. In the same pot with bacon fat, brown the chicken thighs on both sides for about five minutes each; remove from pot.
  3. Sauté onions, garlic, and mushrooms in the drippings until softened (about five minutes).
  4. Deglaze the pot with red wine and add chicken broth; bring to a simmer.
  5. Return chicken and thyme to the pot; cover and simmer for one hour.
  6. Remove chicken again; whisk flour into sauce until smooth. Return chicken to pot and simmer uncovered for an additional ten minutes to thicken.
