  • 1.5 lbs pork tenderloin
  • 1 lb baby potatoes (mixed red and yellow)
  • 2 tbsp extra virgin olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, mix garlic, olive oil, rosemary, thyme, salt, and pepper. Rub this mixture evenly over the pork tenderloin.
  3. Halve or quarter the baby potatoes and toss them in a bowl with olive oil, salt, pepper, and any remaining herbs.
  4. Place the seasoned pork in the center of the baking dish and surround it with the potatoes.
  5. Roast in the preheated oven for 25-30 minutes until the pork reaches an internal temperature of 145°F (63°C).
  6. Let rest for 5 minutes before slicing and serving with pan juices drizzled over the pork and potatoes.
