  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract
  • ½ cup unsalted butter (room temperature)
  • 8 oz cream cheese (room temperature)
  • 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two round cake pans and line them with parchment paper.
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, beat the eggs, milk, oil, vanilla extract, and peppermint extract until smooth.
  4. Gradually combine the wet mixture into the dry ingredients and stir gently.
  5. Divide the batter between prepared pans and bake for 25–30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for ten minutes before transferring them to wire racks. Once completely cool, frost with cream cheese frosting and top with crushed candy canes.
