  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/2 cup raw honey
  • 1/2 cup BBQ sauce
  • 2 cups cooked white or brown rice
  • 1/4 cup low-sodium soy sauce
  • 1/4 tsp cayenne pepper

Instructions

  1. Marinate the chicken by mixing honey, BBQ sauce, minced garlic, soy sauce, and cayenne pepper in a bowl. Place chicken in a resealable bag and pour marinade over it. Seal tightly and refrigerate for at least 1 hour.
  2. Cook rice according to package instructions.
  3. Preheat grill to medium-high or oven to 400°F (200°C).
  4. Remove chicken from marinade (reserve some for basting) and cook on the grill for about 6-7 minutes per side or bake for 25-30 minutes until cooked through.
  5. Let the chicken rest for five minutes before slicing. Serve over rice and drizzle with reserved sauce.
