  • 4 salmon fillets (6 oz each)
  • ¼ cup raw honey
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 1 lb fresh green beans, trimmed
  • 2 bell peppers (1 red, 1 yellow), chopped
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until smooth.
  3. Place green beans and chopped bell peppers on one side of the prepared baking sheet.
  4. Lay salmon fillets on the other side and drizzle half of the glaze over them.
  5. Bake for 15-20 minutes until the salmon flakes easily with a fork and veggies are tender.
  6. Drizzle remaining glaze over everything and finish with lemon juice before serving.
