  • 2 lbs flank steak
  • 2 tbsp taco seasoning
  • 1 cup beef broth
  • 8 corn or flour tortillas
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream (for topping)
  • 1 cup salsa (for topping)

Instructions

  1. Rinse and pat dry the flank steak. Rub taco seasoning over both sides of the meat.
  2. Set the Instant Pot to 'Sauté'. Add a splash of oil and sear the flank steak for 3-4 minutes on each side until browned.
  3. Pour in beef broth, scraping up any browned bits from the bottom of the pot.
  4. Seal the lid and cook on high pressure for 30 minutes. Allow natural release for 10 minutes before manually releasing any remaining pressure.
  5. Remove steak and shred using two forks.
  6. Warm tortillas in the microwave for about 30 seconds wrapped in a damp towel. Assemble tacos with shredded steak, sour cream, salsa, and cilantro on top.
