  • 4 cups fresh kale, chopped
  • 1 cup sweet potatoes, diced (about 1 medium potato)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • ¼ cup grated Parmesan cheese (or nutritional yeast for a vegan option)
  • ½ cup Caesar dressing

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potatoes with 1 tablespoon of olive oil, salt, and pepper; spread on one half of the baking sheet.
  3. Pat chickpeas dry and toss with remaining olive oil, garlic powder, salt, and pepper; place on the other half of the baking sheet.
  4. Roast everything for 25-30 minutes until sweet potatoes are golden brown and chickpeas are crispy.
  5. While veggies roast, wash and tear kale into bite-sized pieces. Massage with a drizzle of olive oil and salt until softened.
  6. Combine roasted sweet potatoes, crispy chickpeas, kale, Parmesan cheese, and Caesar dressing in a large bowl. Toss gently to mix.
