  • 3 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup Korean BBQ sauce (store-bought or homemade)
  • 1 baguette
  • 1 cucumber, thinly sliced
  • 1 cup shredded carrots (pickled if desired)
  • 1/4 cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F (200°C). In a bowl, mix ground beef, garlic, ginger, green onions, and half of the Korean BBQ sauce until just combined.
  2. Shape the mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  3. Bake for 15-20 minutes until cooked through and golden brown.
  4. Slice the baguette lengthwise without cutting all the way through.
  5. Place several meatballs inside each baguette half and top with cucumber slices, shredded carrots, and cilantro.
  6. Drizzle remaining Korean BBQ sauce over the fillings and serve immediately.
