  • 2 ripe mangoes (about 500g), diced
  • 1/2 cup sago pearls (100g)
  • 1 cup full-fat coconut milk (240ml)
  • 1/4 cup granulated sugar (50g)
  • 2 cups water (480ml)

Instructions

  1. Soak the sago pearls in water for 30 minutes. Bring water to a boil and cook the soaked sago pearls for 10-15 minutes until translucent. Drain and rinse under cold water.
  2. In a saucepan, combine coconut milk, sugar, and a pinch of salt over medium heat until the sugar dissolves.
  3. Mix the cooked sago pearls into the coconut mixture and let cool slightly.
  4. Peel and dice the mangoes into small cubes.
  5. In serving bowls, layer mango cubes at the bottom and top with the sago-coconut mixture. Chill for at least an hour before serving.
