  • 2 tablespoons matcha powder
  • 1 cup granulated sugar
  • 1 cup coconut milk (or almond/regular milk)
  • 4 tablespoons melted butter
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan.
  2. In a large bowl, whisk together sweet rice flour, matcha powder, sugar, and baking powder.
  3. In another bowl, mix melted butter and coconut milk until smooth. Gradually combine with the dry ingredients, stirring until well mixed.
  4. Pour the batter into the prepared pan and spread evenly. Bake for 30-35 minutes until edges are golden brown and a toothpick inserted in the center comes out clean.
  5. Let cool for 15 minutes in the pan before transferring to a wire rack. Once completely cooled, cut into squares and serve.
