  • 45 ears fresh corn (or 4 cups frozen corn)
  • 2 tbsp unsalted butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • Juice of 1 lime
  • 1 cup chopped cilantro (optional)
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Cut kernels off fresh corn and set aside. For frozen corn, measure out 4 cups.
  2. In a large pot over medium heat, melt butter. Add onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  3. Add corn, cumin, and chili powder; cook for about 5 minutes until slightly caramelized.
  4. Pour in vegetable broth; bring to a boil, then reduce heat and simmer for about 10 minutes.
  5. Blend soup until smooth using an immersion blender or in batches with a standard blender. Leave some texture if preferred.
  6. Stir in lime juice and cilantro before serving.
