  • 1 medium spaghetti squash (about 3 lbs)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried Italian herbs (oregano, basil, thyme)
  • ½ cup freshly grated Parmesan cheese
  • ¼ cup chopped fresh basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle olive oil inside each half and season with salt and pepper. Place cut-side down on the baking sheet.
  3. Roast the squash for 40-45 minutes until tender; you should be able to pierce the skin easily.
  4. While it roasts, heat olive oil in a skillet over medium heat. Sauté minced garlic until fragrant (about 1 minute). Add crushed tomatoes and Italian herbs, simmering for about 10 minutes.
  5. Once the squash is done, flip it over and use a fork to scrape out strands into the sauce, mixing well.
  6. Serve topped with Parmesan cheese and fresh basil.
