  • 3/4 cup granulated sugar

Instructions

  1. Preheat oven to 325°F (160°C). Mix crushed graham crackers and melted butter in a bowl; press into mini muffin tins lined with paper liners.
  2. Beat softened cream cheese until smooth. Gradually add sugar, then eggs one at a time, mixing well after each addition. Stir in vanilla.
  3. Spoon filling over crusts until about three-quarters full and bake for 15-20 minutes until set but slightly jiggly.
  4. Cool at room temperature for 30 minutes, then chill in the fridge for at least two hours before serving.
