  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 tsp vanilla extract
  • 2 large eggs
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter. Spoon about one tablespoon into each muffin cup lined with paper liners.
  2. In another bowl, beat cream cheese and granulated sugar until smooth. Add heavy cream and vanilla; mix well. Incorporate eggs one at a time until fully blended.
  3. Spoon cheesecake mixture over crusts in muffin tins, leaving space for rise during baking.
  4. Bake for 25-30 minutes until edges are set but centers remain slightly jiggly.
  5. Cool at room temperature, then refrigerate for at least two hours.
  6. Before serving, sprinkle brown sugar on top and caramelize using a kitchen torch or broiler.
