  • Zest of 1 orange
  • 3 large eggs

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press firmly into the bottom of cupcake liners in a muffin tin.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix until fluffy. Stir in vanilla extract, orange juice, and zest.
  4. Add eggs one at a time, mixing just until incorporated.
  5. Spoon the mixture evenly over the crusts in the muffin tin.
  6. Bake for 20-25 minutes or until set but slightly jiggly in the center. Cool before refrigerating for at least two hours.
