  • 20 chocolate wafer cookies (about 1 ½ cups crushed)
  • 5 tablespoons butter, melted
  • 2 cups vanilla or strawberry ice cream
  • 1 cup fresh strawberries, sliced
  • ½ cup whipped cream

Instructions

  1. Preheat the oven to 350°F (175°C). Crush chocolate cookies into fine crumbs and mix with melted butter.
  2. Press one tablespoon of the mixture into each cup of a mini muffin tin. Bake for 8 minutes until set, then cool completely.
  3. Fill each crust with softened ice cream, leaving room at the top for toppings. Cover and freeze for at least 4 hours.
  4. Once frozen, gently remove pies from molds, top with whipped cream and sliced strawberries.
  5. Serve immediately or store in an airtight container in the freezer.
