  • 2 medium carrots, chopped
  • 1 (14 oz) can crushed tomatoes
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp ground coriander
  • Salt and pepper to taste
  • 2 cups water or chicken broth
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  2. Increase heat to medium-high and add chicken thighs. Brown on all sides (approx. 7 minutes).
  3. Add chopped carrots and canned tomatoes; stir well to combine.
  4. Mix in cumin, cinnamon, coriander, salt, and pepper until evenly distributed.
  5. Pour in enough water or broth to cover ingredients (around 2 cups). Bring to a boil, then reduce heat to low, cover, and simmer for about 30 minutes.
