  • 1 lb lean ground beef
  • 1 cup plain or Italian-seasoned breadcrumbs
  • 1 large egg
  • ¼ cup fresh parsley (chopped)
  • 4 oz fresh mozzarella cheese (cut into small cubes)
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, breadcrumbs, egg, parsley, garlic powder, salt, and pepper. Mix gently until just combined.
  3. Take about two tablespoons of the mixture, flatten it in your palm, place a cube of mozzarella in the center, and fold the meat around it to form a ball. Repeat with remaining mixture.
  4. Arrange meatballs on the prepared baking sheet and bake for 20-25 minutes until browned and cooked through.
  5. Let cool for a few minutes before serving.
