  • 4 medium bell peppers (red, yellow, or green)
  • 1 cup finely chopped mushrooms (button or cremini)
  • 1/2 cup cooked rice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds. Trim the bottoms if needed for stability.
  3. In a skillet over medium heat, add olive oil, diced onion, and minced garlic. Sauté until translucent (about 5 minutes).
  4. Stir in chopped mushrooms and cooked rice; season with salt and pepper. Cook for another 5 minutes until mushrooms soften.
  5. Spoon the mixture into the prepared bell peppers. Top each with shredded cheese.
  6. Place stuffed peppers in a baking dish covered with foil and bake for 30 minutes. Remove foil for the last 5 minutes until cheese is golden.
