  • 2 pounds beef chuck roast, cut into bite-sized pieces
  • 1 can (13.5 oz) full-fat coconut milk
  • 4 shallots, finely chopped
  • 6 cloves garlic, minced
  • 2 tablespoons fresh ginger, grated
  • 1 tablespoon ground coriander
  • 1 teaspoon cumin
  • 1 cinnamon stick
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Brown the beef in a large pot over medium-high heat until browned on all sides; set aside.
  2. In the same pot, sauté shallots, garlic, and ginger until fragrant (about 5 minutes).
  3. Stir in coriander, cumin, and cinnamon stick; cook for 1 minute.
