  • 8 oz spaghetti or linguine
  • 1 lb mixed seafood (shrimp, scallops, mussels)
  • 4 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 cup cherry tomatoes, halved
  • ½ cup dry white wine
  • ¼ cup fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and reserve 1 cup of pasta water.
  2. In a large skillet over medium heat, warm olive oil and sauté minced garlic until fragrant (about 1 minute).
  3. Add mixed seafood to the skillet and cook for approximately 3 minutes until shrimp turns pink and scallops caramelize slightly.
  4. Incorporate cherry tomatoes and white wine; let simmer for about 5 minutes until tomatoes burst.
  5. Toss in the drained pasta with reserved pasta water as needed for sauce consistency.
  6. Sprinkle with chopped herbs, toss gently, then serve hot.
