  • 1 cup fresh or frozen peas (cooked and mashed)
  • 3 cups all-purpose flour
  • 2 tsp active dry yeast
  • 1 cup warm water (110°F / 43°C)
  • 1 tbsp honey
  • 1 tsp salt

Instructions

  1. Prepare the peas by boiling fresh ones until tender (about 2 minutes) or thawing frozen ones.
  2. In a bowl, combine warm water, honey, and yeast; let sit for 5 minutes until frothy.
  3. In a large mixing bowl, combine flour and salt. Create a well in the center and add the yeast mixture and mashed peas. Stir to form a shaggy dough.
  4. Knead on a floured surface for about 8 minutes until smooth and elastic.
  5. Place in an oiled bowl, cover, and let rise in a warm area for about 1 hour until doubled in size.
  6. Punch down the dough, divide into equal portions, shape into bagels, and let rest while preheating the oven to 425°F (220°C).
  7. Boil each bagel for about 2 minutes per side before transferring to a baking sheet lined with parchment paper.
  8. Bake for approximately 20 minutes until golden brown.
