  • 4 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1 cup pepperoni slices
  • 1 cup refried beans (canned or homemade)
  • 1 cup pizza sauce
  • Optional toppings: sour cream and chopped green onions

Instructions

  1. Preheat the oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Warm tortillas in a skillet over medium heat for about 1 minute on each side until pliable.
  3. Spread ¼ cup refried beans down the center of each tortilla. Layer with ¼ cup shredded cheese and a few pepperoni slices. Roll tightly.
