  • 2 cups cooked chicken (shredded)
  • 1 cup pizza sauce
  • 1.5 cups shredded cheese (mozzarella and cheddar mix)
  • 0.25 cup fresh cilantro (chopped)
  • 1 ripe avocado (sliced)
  • 0.5 cup sour cream (for serving)

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine shredded chicken, pizza sauce, half of the cheese, and chopped cilantro.
  3. Place one tortilla on a flat surface, add about three tablespoons of the filling, roll tightly, and place seam-side down in the baking dish. Repeat until all filling is used.
  4. Pour remaining pizza sauce over the enchiladas and sprinkle with the rest of the cheese.
  5. Bake for 20 minutes until bubbly and golden.
  6. Garnish with sliced avocado and a dollop of sour cream before serving.
