  • 2 medium Yukon Gold potatoes, peeled and thinly sliced
  • 2 large leeks, sliced
  • 6 large eggs
  • 1 cup grated Gruyere cheese
  • ½ cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp butter for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In an oven-safe skillet, melt butter over medium heat. Sauté leeks until tender (about 5 minutes).
  3. Add sliced potatoes to the skillet; season with salt and pepper, stirring until coated in butter.
  4. In a mixing bowl, whisk together eggs, heavy cream, half of the Gruyere cheese, salt, and pepper.
  5. Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle remaining Gruyere on top.
  6. Bake for 25-30 minutes or until set in the center. Let cool slightly before slicing.
