  • 2 cups fresh purple basil leaves
  • 1/2 cup pine nuts (toasted)
  • 3 garlic cloves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt to taste

Instructions

  1. Gather all ingredients at room temperature.
  2. Toast the pine nuts in a dry skillet over medium heat for about 3-4 minutes until golden brown.
  3. In a food processor, combine purple basil leaves, toasted pine nuts, garlic cloves, and grated Parmesan cheese. Pulse until coarsely chopped.
  4. While blending, slowly drizzle in olive oil until desired consistency is reached. Stop to scrape down the sides as needed.
  5. Add lemon juice and salt to taste; blend briefly to mix.
  6. Transfer pesto to a serving bowl or jar. Optionally drizzle some olive oil on top before serving.
