Ingredients

Scale
  • 1 pre-made pie crust (9-inch)
  • 6 slices thick-cut bacon
  • 2 medium leeks, sliced
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup grated Gruyère cheese
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Place the pie crust in a pie dish and prick the bottom with a fork.
  2. In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels, reserving two tablespoons of drippings.
  3. In the reserved drippings, caramelize the sliced leeks over medium-low heat for about 10 minutes until soft and golden brown.
  4. In a mixing bowl, whisk together eggs and heavy cream; season with salt and pepper.
  5. Sprinkle crumbled bacon over the pie crust, add caramelized leeks, then pour in the egg mixture and top with grated Gruyère cheese.
  6. Bake for 30-35 minutes until set and golden on top. Let cool slightly before slicing.
